Mason Jar Green Goddess Meal Recipe

Ingredients:

  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers, sliced
  • 1 cup shredded carrots
  • 1 cup baby spinach or mixed greens
  • 2 tablespoons sunflower seeds
  • 2 tablespoons hemp seeds
  • Green goddess dressing (store-bought or homemade)
  • Optional toppings: avocado slices, roasted chickpeas, feta cheese

Instructions:

  1. Start by preparing the green goddess dressing. You can use your favorite store-bought dressing or make it at home using our recipe below.  Set it aside.
  2. In a Mason jar or any other suitable container, layer the ingredients in the following order: cooked quinoa, cherry tomatoes, cucumber, bell peppers, shredded carrots, baby spinach or mixed greens.
  3. Sprinkle sunflower seeds and hemp seeds over the layers.
  4. Pour the green goddess dressing into a small container or a separate section of the Mason jar, leaving space at the top.
  5. Seal the Mason jar tightly and refrigerate it until ready to eat.
  6. When you're ready to enjoy your Mason Jar Green Goddess Meal, give it a good shake to distribute the dressing and seeds evenly.
  7. If desired, top the salad with avocado slices, roasted chickpeas, or crumbled feta cheese for added texture and flavor.

  • 1/2 cup cashews, soaked in water for 4 hours and drained
  • 1/4 cup unsweetened plant-based yogurt (such as almond or coconut)
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Water (as needed to adjust consistency)

Instructions:

  1. In a blender or food processor, combine the soaked cashews, plant-based yogurt, fresh parsley, fresh basil, fresh chives, apple cider vinegar, olive oil, minced garlic, salt, and pepper.
  2. Blend until smooth and creamy. If the dressing is too thick, you can add water, a tablespoon at a time, until you reach your desired consistency.
  3. Adjust the seasoning to taste, adding more salt or pepper as needed.
  4. Transfer the vegan Green Goddess Dressing to a jar or container and refrigerate until ready to use.
