Avocado Caesar Salad

There's a hustle that's happening in our bodies to keep us feeling powerful, focused and energized. Mother Earth made avocado is an activated ingredient hustling in your gut to provide a combination of healthy fat (even if it's saturated) and minerals so you can power through your day.

 

COOKING TIME:

45 minutes

INGREDIENTS

  • 1 cup romaine lettuce, sliced
  • 1 cup kale, thin sliced

For Ceasar Dressing

  • ½ avocado
  • 2 tsp nutritional yeast
  • 3 garlic clove
  • 2 Tsp lemon juice
  • 1/2 teaspoon Himalayan salt
  • 1 teaspoon apple cider vinegar
  • 3/4 cup of water

For Chickpea Croutons

  • 1/2 cup chickpea, cooked
  • 1 tsp Himalayan salt
  • pinch cayenne pepper
  • 1/4 teaspoon turmeric
  • 1 Tsp lemon juice
  • 1/2 tablespoon coconut oil

 

INSTRUCTIONS for Dressing

  • Blend till smooth
  • Mix all ingredients, bake on a parchment-lined tray at 420 for 30 minutes, till crisp
  • Chop lettuce and kale and add into a bowl.
  • add 2 tablespoons avocado caesar dressing
  • Marinate into kale & lettuce
  • Add chickpea croutons
