Celery Salad & Vegan Ranch Dressing

This is a powerful salad. One that brings health in the gut and focus to the brain. Celery became a hero ingredient thanks to practitioners sharing what they've experienced in using it to heal gut and hormones issues. It had even shown some benefits to acne reductions.  


  • 3 celery stalks, thin sliced
  • 1 cucumber
  • ⅓ cup parsley, chopped
  • ¼ cup mint, chopped
  • 1 Tsp olive oil
  • 1 cup romaine lettuce
  • 1/2 tsp sea salt and black pepper

INGREDIENTS for Dressing

  • 1 cup sunflower seed
  • ¼ cup lemon juice
  • ¼ cup apple cider vinegar
  • ¼ cup raisins, soaked in
  • 1 ½ cup water
  • 3 garlic cloves
  • 2 Tsp red onion
  • 1 Tsp parsley
  • ½ tsp dill
  • 1 Tsp scallion
  • Gently mix all ingredients for the salad together in a bowl, cover and set aside.
  • Blend all ingredients for vegan ranch dressing, add small amounts of water if too thick.
