Edamame Gazpacho

Edamame is a soy bean that's filled with protein. Mother earth made to help balance your hormones.
INGREDIENTS
  • 1.5 cups edamame ( 3 frozen packs )
  • 1 cup cucumber, peeled and small diced
  • 1/2 cup red or green pepper
  • 1/2 cup diced tomatoes
  • 1-inch fresh ginger minced
  • 1/2 cup cilantro, chopped
  • 1/2 teaspoon salt
  • 1 teaspoons turmeric
  • 2 tablespoons parsley chopped
  • pinch or 2 of cayenne
  • 1/4 cup apple cider vinegar
  • 4 cups veggie broth
  • 2 cups of water

INSTRUCTIONS

  • Cook Edamame
  • Add all ingredients, mix well and chill before serving.
  • Season with minced cilantro and additional salt if needed
